The Idiazabal cheese is produced at Pais Vasco and Navarra, in the north of Spain. Made with sheep raw milk from the "Latxa" sheeps and aged for no less than 60 days. Always Pressed, not cooked.
Between 1 and 3 Kg weight, the Idiazabal cheese is characterized by its penetrating aroma and intense taste.
